Ingredients
- 2cupscooked lentils
- 1cupbreadcrumbs
- 1pieceonion, chopped
- 2clovegarlic, minced
- 1piececarrot, grated
- 1piececelery stalk, chopped
- 1piecebell pepper, chopped
- 1/2cuptomato sauce
- 2tbspsoy sauce
- 1tspdried thyme
- 1tspdried oregano
- Salt and pepper to taste
How to make Vegetarian Lentil Loaf
Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.
In a large mixing bowl, mash the cooked lentils with a fork or potato masher.
Add the breadcrumbs, onion, garlic, carrot, celery, bell pepper, tomato sauce, soy sauce, thyme, oregano, salt, and pepper. Mix well to combine.
Transfer the lentil mixture to the prepared loaf pan and press down evenly.
Bake for 45-50 minutes, or until the lentil loaf is firm and golden brown on top.
Let the lentil loaf cool for a few minutes before slicing and serving.
Tips & Tricks
For a spicier loaf, add a pinch of cayenne pepper to the mixture.
Serve with a side of mashed potatoes or a fresh salad for a complete meal.
