Ingredients

  • 2cups
    cooked lentils
  • 1cup
    breadcrumbs
  • 1piece
    onion, chopped
  • 2clove
    garlic, minced
  • 1piece
    carrot, grated
  • 1piece
    celery stalk, chopped
  • 1piece
    bell pepper, chopped
  • 1/2cup
    tomato sauce
  • 2tbsp
    soy sauce
  • 1tsp
    dried thyme
  • 1tsp
    dried oregano
  • Salt and pepper to taste

How to make Vegetarian Lentil Loaf

  1. Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.

  2. In a large mixing bowl, mash the cooked lentils with a fork or potato masher.

  3. Add the breadcrumbs, onion, garlic, carrot, celery, bell pepper, tomato sauce, soy sauce, thyme, oregano, salt, and pepper. Mix well to combine.

  4. Transfer the lentil mixture to the prepared loaf pan and press down evenly.

  5. Bake for 45-50 minutes, or until the lentil loaf is firm and golden brown on top.

  6. Let the lentil loaf cool for a few minutes before slicing and serving.

Tips & Tricks

  1. For a spicier loaf, add a pinch of cayenne pepper to the mixture.

  2. Serve with a side of mashed potatoes or a fresh salad for a complete meal.
