- 1pieceMedium Onion, diced
- 2cloveGarlic, minced
- 2pieceSmall Tomatoes
- 4tbspGreen Bell Peppers or Red Bell Peppers
- 1/2cupCarrot, diced
- 2canChickpeas, drained
- 2tbspTomato Paste
- 1tspDried Parsley
- 2cupWater or Veggie Stock
- 1tspSalt or to taste
- Ground Black Pepper to taste
- Cayenne Pepper as needed
Herbs and Spices
- Dried Basil as needed
- Dried Oregano as needed
How to make Chickpea and Vegetable Stew
Cooking Instructions
Add olive oil to a pan on medium heat and let it get hot. Add the diced onion and sauté until translucent.
Mix in the minced garlic and sauté for 30 seconds. Then add the bell peppers, tomatoes, diced carrot, chickpeas, dried basil, dried parsley, dried oregano, and tomato paste.
Add water or veggie stock, then mix everything together until the tomato paste is dissolved. Stir in salt and ground black pepper.
Bring the mixture to a boil and let it simmer for 15-20 minutes, or until it thickens.
Add cayenne pepper, if desired. Adjust seasoning and serve with naan bread or rice. Serve and enjoy!
Tips & Tricks
For a spicier stew, increase the amount of cayenne pepper.
