  • 1 7/8lb
    Pasta
  • 3tbsp
    Extra-Virgin Olive Oil
  • 1piece
    Small Onion
  • 3clove
    Garlic
  • 1/2cup
    Green Bell Pepper
  • 8 3/4cups
    Medium Broccoli
  • 1piece
    Large Tomato
  • 1/3cup
    Parmigiano-Reggiano
  • 1cup
    Green Peas, frozen
  • 3tbsp
    Fresh Parsley, chopped
  • 6piece
    Large Fresh Basil Leaves
  • Salt, to taste
  • Ground Black Pepper, to taste

How to make Broccoli and Pea Pasta with Herb Sauce

Preparation

  1. Boil the pasta according to package instructions.

  2. Chop the broccoli into florets.

  3. Roughly chop the onion, green bell pepper, and tomato.

  4. Slice some of the Parmigiano-Reggiano.

Cooking

  1. In a warm pan, add the extra-virgin olive oil, salt, onion, garlic, and green bell pepper. Cook for approximately 5 minutes until soft.

  2. Add the broccoli florets, tomato, and between 1 1/2 to 2 cups of water. You can use pasta water or fresh water. Add the cheese.

  3. Cook until the broccoli is very soft, even mushy.

  4. Blend everything together until you get a thick sauce.

  5. Add the green peas, fresh parsley, and fresh basil leaves, and mix together.

  6. Add the cooked pasta to the sauce, mix well, sprinkle with ground black pepper, and serve immediately.

Tips & Tricks

  1. For a richer flavor, use pasta water instead of fresh water when making the sauce.

  2. Adjust the seasoning to your taste with salt and pepper.
