A simple, healthy and tasty tomato rice recipe made with coconut milk. Best served with potato fry and pickle.

- 3cloveGarlic
- 1/2inGinger
- 1pieceGreen chilly
- 1/2tspTurmeric powder
- 1tbspGhee
- 2 1/2cupCoconut milk
- 2tbspCoriander leaves
- Salt to taste
How to make Easy Tomato Rice
Preparation
Soak the rice for 30 minutes and then strain it. Set aside.
Tomato Mixture
Add tomato pieces, green chilly, garlic, and ginger to a mixer jar. Grind the mixture and then strain it.
Cooking
Place a cooker on the stove and add coconut milk, salt, strained tomato mix, turmeric powder, and ghee. Let it boil.
When it starts bubbling, add the rice. Close the lid and cook until the rice is well cooked.
Turn off the flame. Once the pressure is completely gone, open the lid.
Add chopped coriander leaves and mix well.
Tips & Tricks
For extra flavor, you can add a pinch of cumin seeds while boiling the coconut milk.
Serve with potato fry and pickle for a complete meal.
