How to make Chakka (Jackfruit) Appam

  1. Step 1

In a medium-sized pot, add ghee. Once the ghee is slightly hot, add diced jackfruit bulbs. Stir occasionally until the jackfruit bulbs slightly soften.

  2. Step 2

Stir in the jaggery and keep stirring until it melts completely.

  3. Step 3

Add coconut, ginger powder, cumin powder, and cardamom powder. Mix until the dough is soft.

  4. Step 4

Turn off the heat and remove the pan from the stove. Add rice flour and stir until the mixture pulls away from the pan edges. Optionally, add raisins and/or nuts.

  5. Step 5

Once the mixture is cool enough to handle, form round jaggery jackfruit balls.

  6. Step 6

Place water at the bottom of a steamer. Once the water is hot, place the jaggery jackfruit balls into the steamer, close the lid, and steam for at least 5-7 minutes.

  7. Step 7

Remove from steamer. Chakka Appam is best served warm.

Tips & Tricks

  1. Adjust the amount of jaggery based on your preferred sweetness level.

  2. Ensure the jackfruit is ripe and sweet for the best flavor.

  3. If you are using jaggery cubes, you can add 1/2 cup of water to assist with the melting process.

FAQS

  1. Is there an alternative to rice flour?

You can use semolina or millet flour instead of rice flour.

  2. What if I do not have a steamer?

You can use a pot-in-pot method by placing a smaller pot upside down in a larger pot with water, then balance the plate with jaggery jackfruit balls on top and steam.
