How to make Elevated White Rice(Nigerian style)

Wash the parboiled white rice thoroughly.

Bring water to a boil , add washed rice and sprinkle a pinch of salt into the almost boiling water.
- Step 3
Add the rice into the boiling water and mix well to combine.
- Step 4
Cover the pot and cook until the rice is tender and the water has dried up.
- Step 5
Add the diced carrot, sweet corn, green peas, and butter. You can use spring onions instead of peas or add both.

Mix everything well to combine.

Cover the pot and cook on low heat for 5 minutes. After 5 minutes, turn off the heat.

For Nigerian rice (non-basmati)
- Step 1
After cooking the rice for 5 minutes in boiling water, sieve out the rice and rinse it to remove excess starch.
- Step 2
Boil another 1 cup of water in a pot .Once it boils, add the rinsed rice,pinch of salt and cook for the second time.
- Step 3
Be careful with the amount of water to avoid over-softening the rice.
