Ingredients

  • 1kg
    Beef Oxtail
  • 2in
    Big Onion, chopped and divided
  • 6
    cloves Garlic, slivered and divided
  • 2tbsp
    Thyme, stems remove, divided
  • 3
    Bay Leaves

    x Beef Cubes dissolve 160 of hot water
  • 160mL
    Red wine
  • 100g
    Tomato Paste
  • 1/2tsp
    Freshly Ground Black Pepper
  • 12in
    Baby Potatoes, cut half
  • 4
    Carrots, cut into rings
  • 150g
    Green Beans, cut in half
  • 1
    packet Mushrooms, cut half

How to make Instant Pot Beef Oxtail Stew

  1. Begin by placing half of the chopped Onions, Garlic and Thyme in the Instant Pot

  2. Add the Oxtail, Bay Leaves, Tomato Paste, Cloves, Red Wine, Black Pepper and Beef Stock to the pot.

  3. Set the Instant Pot on medium for 90 minutes, if your Instant Pot only allows 60 minutes, don't worry you can set it for another 30 minutes after the 60 minutes are up.

  4. Make sure the release valve is close before start cooking.

  5. Once the 90 minutes is over, check the tenderness of the meat, by inserting a fork; if it slide in easily, its almost done. If its still hard, set the Instant Pot for another 15 or 30 minutes.

  6. Once the Oxtail is tender, layer with the other half of Onions, Garlic and Thyme.

  7. On top of that layer first the root vegetables, potatoes and carrots, the add the rest of the vegetables.

  8. Then set the Instant Pot for another 5 minutes to cook the vegetables

  9. Check the potato softness and adjust the seasoning according to taste, if the the potatoes is still a bit hard, cook another 3-5 minutes

  10. Serve and Enjoy!

  1. I use 2 beef stock cubes for extra flavour and saltiness.

  2. If you have the time and patience you can brown the meat before hand in a pan before adding to the Instant Pot, but it doesn't really makes a difference in flavor.

  3. What makes the recipe great is the Thyme, try not to cook without!!

  4. Beef Oxtail can be served on a bed of rice, samp, mash potatoes or freshly baked bread.
