Pasta Dough
- 2cupswhole wheat flour
- beetroot juice
Filling
- 1cupricotta cheese
- 1cupspinach, finely chopped and sautéed
- salt
- pepper

How to make Homemade Beetroot-Stained Pasta with Spinach Ricotta Filling
Prepare the Pasta Dough
Mix whole wheat flour with beetroot juice until a smooth, pliable dough forms.
Knead for 10 minutes and rest for 30 minutes.
Make the Filling
Combine ricotta, sautéed spinach, salt, and pepper in a bowl.
Mix until smooth and set aside.
Shape and Cook the Pasta
Roll out the dough thinly and cut into squares.
Spoon filling into the center of each square with spinach and beet (leftover) and fold into parcels.
Tie each parcel with a strand of lemongrass to secure.
Insert a colander into a pot of vigorously boiling salted water.
Place parcels in the colander and cook for 5-7 minutes or until tender.
