A vibrant and flavorful beet and apple relish served on toasted bread with pea-basil pesto.

Ingredients

4 Servings
(1 serving = 1 toast)

Relish

  • 1cup
    roasted beets, grated
  • 1piece
    Granny Smith apple, grated
  • 1/4cup
    red onion, finely grated
  • 1tsp
    sugar
  • 1/4tsp
    ground cinnamon
  • 1piece
    lime, juiced

Assembly

  • 1/4cup
    pea-basil pesto
  • 4piece
    barrel bread slices, toasted

How to make Beet and Apple Relish Toasts

Prepare the Relish

  1. In a large bowl, combine the grated roasted beets, grated green apple, and grated red onion.

  1. Sprinkle in the sugar and ground cinnamon. Squeeze the lime juice over the mixture.
