A refreshing Middle Eastern salad with crispy lavash and a tangy lemon dressing.
Ingredients

(1 serving = 1 bowl)
Salad
- 1cupRoma Tomatoes (diced)
- 1/2cupRadish (diced)
- 1/2cupGreen Pepper (diced)
- 1/2cupRed Onions (thinly sliced)
- 1cupCucumber (deseeded & sliced diagonally)
- 1cupCos Lettuce (roughly shredded)
- 1/2cupItalian Parsley (roughly chopped)
- 1cupLavash (broken into small pieces)
Dressing
- 1/2cupLemon Juice (freshly squeezed)
- 1tbspLemon Zest
- 1/2cupPure Olive Oil
- 1tbspMint Leaves (chiffonade)
- 1tspSumac
- Salt & Pepper to taste
How to make Fattoush Salad
In a mixing bowl, add all the other salad ingredients and mix.
Place the dressing ingredients into a jug and blend with a stick blender until well combined.
Add the dressing to the salad and mix well. Serve the salad on a platter and garnish with the lavash.
Tips & Tricks
Adjust the seasoning of the dressing to your taste preference.
