Chicken Rogan Josh recipe

Ingredients

4 Servings
(1 serving = 1 portion)

Curry

  • 3cups
    Chicken fillet (cubes)
  • 1cup
    onion (finely chopped)
  • 1tbsp
    Durban masala
  • 1tbsp
    Cumin powder
  • 1tsp
    Chilli powder
  • 1tsp
    Turmeric
  • 1tbsp
    ginger (minced)
  • 2tbsp
    vegetable oil
  • Salt & pepper to taste
  • 1tbsp
    garlic (minced)
  • 2tsp
    ginger (minced)
  • 1can
    chopped tomatoes
  • Salt & pepper to taste

How to make Chicken Rogan Josh

  1. Heat the pan and add the vegetable oil, then add the onions. Sauté until onions are golden brown.

  2. Add the masala, cumin chilli powder & turmericZ. Sauté for about 1 minute, then add a little water to prevent the spices from burning.

  3. Cook the spices for about 5 minutes, adding a little water as needed.

  4. Add the tomatoes, garlic, and ginger. Mix well, then turn the heat down to a simmer. Let the sauce cook for at least 20 minutes to allow the flavors to infuse.

Prepare the Curry

  1. Heat a large pan, add the rest of vegetable oil, then add the chicken cubes to get a golden brown colour on all sides.

  2. Serve and garnish with coriander leaves.
