These fluffy and delicious souffle pancakes are easy to make at home. They are light, airy, and perfect for a delightful breakfast or brunch.

Ingredients

2 Servings
(1 serving = 2 pancakes)

Pancake Batter

  • 2
    eggs
  • 4tsp
    milk
  • 30g
    flour
  • 1tsp
    vanilla essence
  • 2tbsp
    sugar

Method

Instructions

  1. Separate egg yolks and whites.

  2. In a bowl with egg yolks, add milk and mix well. Sift in flour, add vanilla essence, and mix until smooth.

  3. In a separate bowl, whip the egg whites until bubbles form. Add sugar and continue beating until stiff peaks form.

  4. Gently fold 1/3 of the egg yolk mixture into the egg white mixture. Then pour in the remaining egg yolk mixture and fold until well combined.

  5. Heat a non-stick pan over low heat. Spoon the batter into the pan. Add 2 tbsp of water, cover, and cook for 5 minutes.

  6. Uncover, flip the pancakes, add 1 tsp of water, cover, and continue to cook for another 5 minutes until fluffy and cooked through.

  7. Serve the souffle pancakes warm and enjoy the fluffy goodness.

Tips & Tricks

  1. Be gentle when folding the egg yolk mixture into the whipped egg whites to maintain the fluffy texture of the pancakes.

  2. Cook the pancakes on low heat to ensure they cook through evenly and rise beautifully.
