How to make Chicken and Andouille Sausage Gumbo

Prepare the Chicken Stock

  1. Step 1

    In a large stockpot, add roughly chopped onion, shallot, a few garlic cloves, parsley, and whole chicken.

  2. Step 2

    Keep it at a low simmer, uncovered or partially covered, for 4–6 hours.

  3. Step 3

    Carefully strain stock through a fine mesh strainer or cheesecloth into another pot or container.

  4. Step 4

    Shred the chicken.

    In a large pot, heat the oil over medium heat.

  2. Step 2

    Gradually add the flour, stirring constantly to make a roux.

  3. Step 3

    Cook the roux until it is a dark brown color.

  4. Step 4

    Add the sausage to the pot.

  5. Step 5

    Stir in the chopped green onion, parsley, shallot, and oregano.

  6. Step 6

    Add in the shredded chicken. Pour in chicken stock. Bring to a boil, then reduce to low.

    Simmer the gumbo for about 1.5 hours, stirring occasionally.
