A delicious and innovative way to use leftover mashed potatoes, stuffed with chorizo, cheese, and vegetables, baked to perfection.
Ingredients
1 Servings
(1 serving = 1 roll)
- Leftover mashed potatoes
- 250ggrated mozzarella cheese
- Black pepper
- 125gchorizo
- 1/2onion
- 1/2yellow bell pepper
- 3garlic cloves
- 2tbspolive oil
- 1tsppaprika
- Parsley (handful)
How to make Stuffed Potato Roll with Chorizo
Preheat oven to 180˚C.
Sprinkle half of the mozzarella cheese on the parchment paper. Add mashed potatoes over the cheese. Press with a spoon or hands. Sprinkle black pepper and bake until golden.
Fry chorizo, onion, bell pepper, & garlic for 10 min then add olive oil, paprika fry for another 5 min and add tomato sauce followed by parsley. Leave to simmer for 5 minute. Remove from the heat.
Spread the mix evenly over the potato sheet. Roll and bake for 15 minutes.
Garnish with parsley. Slice and enjoy.
