- 2cupsCherry Tomatoes, halved
- 1cloveGarlic, minced
- 1pieceLarge Zucchini
- 3tbspExtra-Virgin Olive Oil
- 1pinchCrushed Red Pepper Flakes
- 1tspDried Oregano
- Capers
- Pine Nuts, toasted
- Parmesan Cheese, freshly grated
- Fresh Basil
How to make Zucchini Noodles with Cherry Tomatoes and Pine Nuts
Prepare the Zucchini Noodles
With a spiralizer, make strands from the zucchini.
Cook the Tomatoes and Zucchini
In a skillet, heat extra-virgin olive oil and sauté cherry tomatoes with crushed red pepper flakes, dried oregano, garlic, and capers for 1 minute on medium-high heat.
Add the zucchini noodles and cook, tossing for 2-3 minutes.
Serve
Plate the dish and sprinkle with pine nuts, Parmesan cheese, and fresh basil.
Tips & Tricks
For a vegan or paleo version, omit the Parmesan cheese.
