How to make Herb-Spiced Potato Wedges
Preheat your oven to 350 degrees F (180 degrees C) with the fan off.
In a large bowl, add enough olive oil to cover the potatoes. Add garlic powder, dried oregano, dried tarragon, dried thyme, salt, and smoked paprika.
Clean the potatoes without removing the skin and cut them into wedges. Add them into the bowl and toss until thoroughly coated in the oil and spices.
Once the wedges are covered in oil and spices, remove them and place on a baking rack with a tray. Add a little bit of water to the bottom of the pan.
Bake the potato wedges at 350 degrees F (180 degrees C) for 45 minutes.
Once baked, remove from the oven and let them cool a little before serving. Enjoy.

For extra crispiness, soak the potato wedges in cold water for 30 minutes before seasoning.
