Delicious gluten-free chocolate sandwich cookies with a rich chocolate hazelnut spread filling.

Ingredients

  • 1/4cup
    Rice Flour
  • 2tbsp
    Almond Flour
  • 2tbsp
    Dark Cocoa Powder
  • Baking Powder
  • Salt

Wet Ingredients

  • 2tsp
    Coconut Oil, melted
  • 1tbsp
    Honey
  • 1piece
    Large Egg white
  • Almond Milk

Filling

  • Chocolate Hazelnut Spread or Chocolate Cashew Butter

How to make Gluten-Free Chocolate Sandwich Cookies

Preparation

  1. Preheat oven to 355 degrees F (180 degrees C).

Mixing the Dough

  1. In a large bowl, mix together the Gluten-Free Oat Flour, Rice Flour, Almond Flour, Dark Cocoa Powder, Salt, and Baking Powder.

  4. Wrap up the dough in plastic wrap and refrigerate it for 30 minutes.

Shaping the Cookies

  1. With a rolling pin, roll out the dough between parchment paper until it's 3-5 mm in height.

  1. Bake in the preheated oven for 15 minutes.

Assembling the Cookies

  1. Let the cookies cool down completely.

  2. Drop a teaspoon of the Chocolate Hazelnut Spread on the whole circles.
