by Ria Pai (@riapai009)Creamy, rich and decadent milk-vermicelli pudding Doodhpak recipe with step-wise pictures. Doodh Pak recipe is really delicious and simple to make! This is usually made during Ganesh Chaturthi.
Ingredients
- 1Lfull cream milk
- 1cupsugar
- 2tbspsoaked Sabudana
- Few pods of green cardamom
- Mix dryfruits of your choice
- 1cupVermicelli ( sevaiyan)
- Few strands of saffron
- 1/2cupwater
- Some pistachio flakes to garnish
How to make Sevaiyan Doodh Pak | Vermicelli Pudding
Heat 1 tbsp ghee and roast dryfruits of your choice. Keep the roasted dryfruits in a small plate aside.
Again heat 1 tbsp ghee and roast vermicelli till it turns brown in colour. Keep it separately in a plate.
Heat 1 tbsp ghee in the same pan and add cloves with soaked Sabudana , few saffron strands, 1/2 cup water & roasted vermicelli. Simmer for 5-7 min.
Once vermicelli cooks , add full cream milk and crushed cardamom pods. Allow the milk to boil. This will take around 10 min.
Add sugar as per taste ( I added 1 cup sugar for 1 litre milk ) with roasted dryfruits.
Let the pudding simmer for another 5 min.. Switch off the flame. Allow it to rest for few minutes , this will thicken the pudding. Doodh Pak is ready to serve !!! You can serve warm or cold as per your preferences. Garnish some pistachio flakes.
Tips & Tricks
Doodh Pak tastes awesome when served chilled.
Use full cream milk for best results.
To thicken pudding/ kheer , I used sabudana , you can use rice or poha ( flattened rice).
Clove gives a spice punch to the pudding. Do add.
