A popular Kerala teashop snack known for its distinctive cracks formed during frying.

Ingredients
- 1cupall-purpose flour
- 2pieceegg
- 1/2cupsugar
- 1/4tspbaking soda
- 1/2tspcardamom powder
- oil for frying
How to make Vettu Cake / Fried Cake
Add sugar to a mixer jar and grind to a fine powder. Keep aside.
In a bowl, add flour, baking soda, and cardamom powder. Mix well.
In another bowl, add powdered sugar and eggs. Whisk well.
Add the flour mixture to the egg mixture. Mix well without adding water.
Let the dough rest for 1 hour.
After resting, make lemon-sized balls by wetting your hands, as the dough is slightly sticky.
Heat oil in a pan. When the oil becomes hot, add the dough balls and reduce the flame to medium.
Fry on medium flame until cracks appear on the balls and they are well fried.
Remove from oil and serve.
Tips & Tricks
Ensure the oil is hot before adding the dough balls , then turn the flame to medium to achieve the characteristic cracks.
Do not add water to the dough mixture to maintain the correct texture.
