How to make Ultimate Chocolate Orange Truffles [Only 3 ingredients]

Prepare the Mold

  1. Step 1

Line a 15cm square ring or mold with baking paper. Lightly grease the sides with a little butter or oil to ensure your truffles release perfectly later. Set this aside.

Make the Orange Concentrate

  1. Step 1

Zest one orange and squeeze 150ml of juice. Combine them in a small saucepan. Gently boil on medium flame for 3-4 minutes until the liquid reduces by half (about 75ml left). Turn off the heat.

Melt the Chocolate Base

  1. Step 1

Place 200g of dark chocolate in a heat-proof bowl. Pour the hot orange concentrate directly over the chocolate. Let it sit for 2 minutes; the heat from the juice will gently melt the chocolate without seizing it.

Add Honey & Mix

  1. Step 1

Add 1 tablespoon of honey. Stir the mixture well until it is glossy, smooth, and fully combined.

Chill the Ganache

  1. Step 1

Pour the mixture into the prepared mold. Cover it and refrigerate for 1 hour, or until it is firm to the touch.

Cut the Truffles

  1. Step 1

Remove the set ganache from the mold. Slice the slab into small 3x3 cm squares.

Coat & Decorate

  1. Step 1

Melt the remaining dark chocolate. Dip each square into the chocolate to coat it evenly, tapping off any excess. Sprinkle fresh orange zest on top before the shell hardens.

Final Set

  1. Step 1

Refrigerate for another 1 hour to let the coating snap.
