Cookie Dough

  • 1/2cup
    cocoa powder
  • 1cup
    castor sugar
  • 1/2cup
    melted butter (salted)
  • 3tbsp
    vegetable / corn oil
  • 1
    egg

    vanilla
  • 1 1/3cup
    all purpose flour
  • 1/2tsp
    baking powder
  • 1/3cup
    chocolate chips

How to make Soft Brownie Cookies

Instructions

  1. Preheat your oven to 170°C.

  2. In a large mixing bowl, add the caster sugar and cocoa powder. Stir until they’re evenly blended.

  3. Pour in the melted butter and vegetable oil. Mix until the batter is smooth and fully combined.

  4. Crack the egg and add vanilla essence. Mix again until the mixture is silky and homogeneous.

  5. In a separate bowl, whisk together the flour and baking powder. 

  6. Gradually add the flour-baking powder mixture into the chocolate batter. Stir until there are no streaks of flour. Do not overmix.

  7. Once your dough is ready, fold in the chocolate chips. Use dark or milk chocolate, totally up to your taste.

  8. Scoop the dough into balls (you can use an ice cream scoop, but if you don’t have one, just use your hands

  9. Roll them into balls and slightly flatten them. How thick you want them is totally your choice

  10. Bake at 170°C (340°F) for around 12 minutes. Baking time may vary depending on your oven.

  11. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack. They’ll firm up slightly but remain soft and fudgy inside.

  12. Store in an airtight container to keep them soft and gooey.
