A delicious and simple eggplant omelette, perfect for breakfast or brunch.
Ingredients

(1 serving = 1 omelette)
- 4pieceeggplant
- 2pieceeggs
- 1dashgarlic powder
- 1dashblack pepper
- 1pinchsalt
- 2tbspcanola oil
How to make Eggplant Omelette
Grill the eggplant until tender.
Peel off the skin of the eggplant.
Scramble the eggs, then add garlic powder, black pepper, and a pinch of salt.
Dip the peeled eggplant into the scrambled egg mixture and flatten it.
Heat canola oil in a pan. Fry the eggplant until it turns brown, then flip it in the pan and cook the other side until brown.
Tips & Tricks
Ensure the eggplant is grilled until very tender for the best texture.
You can add other spices to the egg mixture for additional flavor.
