Ingredients
Banana Sweet Appam Batter
- 1over ripe banana
- 1cupwhole wheat flour
- 1/2cuprice flour
- 1/4cupth jaggery powder ( or as per taste)
- 2tbspgrated coconut
- 1tspcardamom powder
- pinchof salt
- 3tbspwater ( or adjust as per thick consistency)

- Ghee as required
How to make Instant Banana Appam
In a large bowl , mash over ripe banana with jaggery powder and cardamom powder . Mix well
Next add grated coconut and pinch of salt. Mix well again.
Once this mixture is ready, add whole wheat flour and rice flour with water. Adjust water accordingly to adjust thick consistency. I used 3 small cups of water
The batter should be thick enough to get fried well in the Appam fry pan.
Now , in this batter, add 1 tsp baking soda / 1 packet of eno fruit salt. Add 1 tsp of water to activate soda . Beat with fingers to make a fluffy batter. Meanwhile heat Appam fry pan too with 1 spoon of ghee on each section.
Add 1 spoon each of the appam batter on the Appam fry pan. Close with lid and keep the flame low . Cook for 3-4 min.
Open the lid and turn the appams using spoon or Appam stick. Cover and fry for another 2-3 min .
Switch off the flame when the Appam has nicely turned brown in colour. Take it on a plate and keep aside for few minutes. Let it settle down before serving. This enhances the flavour and makes the Appam plumpy and succulent. I served after 10 min. You can check on the photo below the thickness of Appam after breaking into half.
Tips & Tricks
Pour the batter immediately on the fry pan after adding eno otherwise the Appam won't rise well after frying.

rice flour makes Appam crispier so don't forget to add.
add coconut cubes for the crunchy taste within.
Make sure you heat the fry pan well so that the batter won't stick at the bottom
