How to make Aate Ki Pinni - Winter Special
Roast the Gond
Heat 2 tbsp ghee in a heavy-bottomed pan over medium heat.
Add the gond and fry while stirring until it puffs up and turns crunchy. Remove and set aside.
Toast the Nuts & Makhana
Lightly roast the nuts in the same pan for 1–2 minutes until aromatic. Set aside.
Next, dry roast the makhana until crisp. Let everything cool.
Grind the Mix
Once cooled, coarsely grind the gond, nuts, and makhana together. Set aside.
Roast the Flours
In the same pan, add the remaining ghee and let it melt on low-medium heat.
Add the atta and besan, and roast slowly, stirring constantly, until golden brown and aromatic. This may take 25–30 minutes.
Combine Ingredients
Add the ground nut-gond-makhana mix into the roasted flour and mix well for 3–4 minutes.
Turn off the heat and stir in the sugar thoroughly.
Shape the Pinnis
Let the mixture cool just enough to handle.
While still warm, take lemon-sized portions and roll into round balls (pinni).
Store & Serve
Allow the pinnis to cool completely before storing them in an airtight glass container.
Enjoy with hot tea or as a quick energy-boosting snack.
