Pesto is a vibrant green sauce originating from Genoa, Italy, traditionally made with fresh basil leaves, pine nuts, garlic, Parmesan cheese, and extra virgin olive oil. This flavorful sauce boasts a bright, herbaceous, and slightly nutty taste, with a smooth, slightly coarse texture depending on the preparation method. Pesto offers a rich aroma and a distinctly savory character, making it a versatile ingredient to elevate a wide variety of dishes. Freshly made pesto exhibits a bright green color; however, commercially produced or aged pesto may exhibit a darker, more olive-green hue. The quality of pesto depends heavily on the freshness and quality of its components, especially the basil and olive oil.

Pesto is best stored in the refrigerator to maintain its vibrant color and fresh flavor. Transfer it to an airtight container and drizzle a thin layer of olive oil on top to prevent oxidation and browning. Properly stored pesto can last up to a week in the refrigerator. For longer storage, pesto can be frozen in ice cube trays and then transferred to a freezer bag for up to 2-3 months. Thaw in the refrigerator before using.
