  • 3tbsp
    full cream milk
  • 3tsp
    coffee emulco
  • 250g
    salted butter
  • 250g
    castor sugar
  • 5
    eggs (grade A/B)
  • 250g
    all purpose flour (sifted)
  • 2tsp
    baking powder

How to make Coffee Marble Cake

  1. Preheat the oven to 180c.

  2. In a small bowl, mix together the milk and coffee emulco until well combined. Set aside.

  3. In a larger mixing bowl, cream the butter and caster sugar together until light and fluffy.

  4. Add the eggs one at a time, beating well after each addition until fully incorporated.

  5. In a separate bowl, mix the flour with baking powder. Then, gradually add this flour mixture to the wet mixture, alternating with the milk and coffee mixture, until everything is well blended and the batter turns a smooth light brown.

  6. Scoop out about one-fourth of the batter into a separate bowl and mix in a bit of brown food coloring to create a darker shade for the marble effect.

  7. Prepare a 5-inch round aluminum foil cake pan by lightly greasing or lining it if needed.

  8. Pour a layer of the light brown batter into the pan.

  9. Drop three spots of the darker brown batter on top of the first layer.

  10. Add another layer of the light brown batter, followed again by three spots of the darker batter.

  11. Using a toothpick, gently swirl the batter to create a beautiful marble effect.

  12. Bake the cake in a preheated oven at 180°C (356°F) for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
