Foxnut and Cashew Ninja Creami Kulfi Ice-cream

Ingredients
- 1/2cupFoxnuts (Makhana)
- 1tbspclarified butter (ghee)
- 1/4cupcashews soaked for at least 15 min
- 1tspcardamom powder
- 2 1/2cupwhole milk
- 1/3cupsugar
How to make Foxnut and Cashew Ninja Creami Kulfi Ice-cream
Dry roast foxnuts in ghee until crisp.
Grind the roasted foxnuts when cool.
Puree the soaked cashews to a fine paste.
Add the ground foxnuts and cashew paste to boiling milk.
Cook until the mixture thickens, about 5 to 7 minutes.
Mix in cardamom and sugar.
Let the mixture cool completely.
Pour into a Ninja Creami pint jar and freeze for about 24 hours.
Place the frozen pint in the Ninja Creami and process to get the fluffiest creamy Kulfi ice cream.
Tips & Tricks
We have actually made a delicious and healthy Makhana kheer, which can also be eaten warm or cold.
You can mix in nuts of choice like almonds or pistachios for a richer Kulfi ice cream, using the mix-in function of the Ninja Creami.
You can replace the sugar with 3 tbsp Agave syrup or Honey for an even healthier low sugar option.
This is a gluten-free recipe.
Replace milk with vegan milk like almond milk to make it dairy-free.
