Let the mixture cool slightly. Transfer to a mortar and pestle and pound into a coarse chutney—alternatively, pulse in a blender for just a few seconds. Do not overblend—you want a coarse, textured mix, not a smooth paste.

Mix in salt and lemon juice. Serve fresh with bhakri, jowar roti, or as a bold side to rice and dal.
