Shark meat is highly perishable and requires careful storage. Fresh shark should be tightly wrapped in plastic wrap and stored in the coldest part of the refrigerator, ideally between 32°F and 38°F (0°C and 3°C), and used within 1-2 days. For longer storage, shark can be frozen. Wrap it tightly in freezer wrap or place it in a freezer bag, removing as much air as possible to prevent freezer burn. Frozen shark can last for several months.
