Shandong cuisine, or Lu cuisine, is one of the most historically influential of China's eight great traditions, originating from the northeastern coastal province. Known for its emphasis on seafood, hearty wheat-based staples like mantou and jiaozi, and masterful use of braising and deep-frying techniques, Shandong cooking offers rich, savory flavors. Signature dishes include braised sea cucumber, sweet and sour carp from the Yellow River, and dezhou braised chicken.
