Southern Persian cuisine from the provinces along the Persian Gulf — Hormozgan, Bushehr, and Khuzestan — is Iran's most boldly spiced regional cooking. Indian and Arab influences introduce turmeric, tamarind, fenugreek, and chili into the Persian flavor palette. Ghalieh mahi (spicy fish stew), samoosa, and spiced rice dishes define the region. Dates, tropical fruits, and seafood from the gulf are essential ingredients.
