Pacific Recipes

Pacific Colombian cuisine comes from the Chocó region and the country's Pacific coast, where Afro-Colombian communities maintain deeply rooted culinary traditions. Coconut is ubiquitous, appearing in rice, seafood stews, and desserts. Fish and shrimp cooked in coconut milk with local herbs, tapao (fish steamed in banana leaves), and encocado (coconut seafood stew) are signature dishes. Tropical fruits like borojó and chontaduro, along with mangrove-harvested piangua clams, are unique to this biodiversity-rich coast.
