Gilani cuisine from Iran's lush Caspian province of Gilan is the most distinctive regional cooking in Persia, shaped by subtropical forests, rice paddies, and abundant rainfall. Garlic, herbs, sour flavors, and smoked fish define the cuisine. Mirza ghasemi, baghali ghatogh, and fesenjan originated here.
