Barbadian cuisine, known as Bajan food, reflects the island's British colonial history and strong African culinary roots. Cou-cou and flying fish is the beloved national dish, combining cornmeal and okra with perfectly fried or steamed fish. Macaroni pie, rice and peas, and pudding and souse (a Saturday tradition) are staples. Bajan seasoning—a green marinade of herbs, scotch bonnet, and garlic—flavors meats and fish. Fishcakes, cutters (sandwiches in salt bread), and rum punch complete the Bajan table.
