Anhui Recipes

Anhui cuisine, or Hui cuisine, is a rustic and hearty tradition rooted in the mountainous interior of eastern China, particularly the Huangshan region. Wild herbs, freshwater fish, bamboo shoots, and mushrooms feature prominently, prepared through braising, stewing, and oil-blanching techniques. The cuisine is known for its resourceful use of humble local ingredients transformed into deeply flavorful dishes like stinky mandarin fish, Li Hongzhang hotchpotch, and bamboo shoot stew.
