- 8piecepotatoes, diced
- 2tspsalt
- 3cupmilk or cream
- 1/8tspnutmeg, optional
- 2pieceonions, sliced
- 2tbspbutter
- 1tbspchopped parsley
How to make Cream of Potato Soup
Put potatoes and onions into a saucepan with enough water to cover them.
Add salt. Cover and cook over medium to low heat until potatoes are tender.
Once potatoes are tender, mash them in the liquid.
Add remaining ingredients. Stir constantly, and do not let it boil.
Once the liquid has thickened, garnish with parsley and serve immediately.
Tips & Tricks
For a richer flavor, use cream instead of milk.
Add a pinch of nutmeg for a subtle, warm spice.
