- 250gKarela ( bitter gourd)
- 1/2tspAsafoetida
- 1/2tspcumin seeds
- 1/2tspfennel seeds
- 1/2tspKalongi or Nigella seeds
- 1tbspturmeric powder
- 1tbspred chilli powder
- 1tspgaram masala powder
- 1tbspAmchur powder
- 2tbspcoriander powder
- 4tbspoil
- 1 1/2tbspsalt
- 1big size onion coarsely grinded 1 big tomato coarsely grinded

How to make Stuffed Karela ( Bitter Gourd)
Wash and peel karela and make a slit in the center, take out the big seeds if any
Now take 1/2 tsp salt ,1/2 tsp turmeric, 1/2 tsp red chilli powder mix and apply on top and inside of karela set aside for 7-8 minutes
Take a heavy bottom pan or Kadai heat 2 tbsp oil add cumin seeds ,Asafoetida, fennel seeds,and kalongi seeds let them splutter a bit
Now in the same pan add Onion and sorte till they turn translucent, now at this stage add tomato to the onion mixture ,add red chilli powder ,turmeric powder, coriander powder ,garam masala powder, salt,amchur powder mix the spices and keep stirring at intervals cook for 3-4 minutes till the oil starts to ooze out .
Now take out the mixture in a separate plate and let it cool down a bit
Take the slit karela and wash them thoroughly so that all the bitterness is redused and no extra salt is left
Pat dry the karela and start to fill it with the prepared mixture of onion and tomato
After all the karela's are filled tie them with the help of a thread so that at the time of shallow frying them the stuffing does not comes out
Now in a clean pan put 2 tbsp oil and put all the karela and cover with a lid ,cook for 5-6 minutes on low to medium heat then turn the karela to other side repeat the process till they are perfectly cooked .

Aways prefer small sized karela for stuffed recipe
Remove the seeds as much as possible this way the karela will not be too bitter ,
Never add too much salt at the time of cooking as we have already marinated the karela with salt.
