Working people or a homemakers - anybody can make use of this gravy mix to get food prepared in a jiffy. It has all the ingredients easily available in our homes and can be prepared and stored in refrigerator for one week. I learnt it from my Mom and now do it for my home.

Ingredients

  • 4tbsp
    Oil
  • 1tsp
    Asafoetida
  • 1tsp
    Cumin Seeds (Jeera)
  • 2tbsp
    Coriander Powder
  • 2tbsp
    Red Chilli Powder
  • 1tbsp
    Garam masala powder
  • 1tbsp
    Turmeric Powder
  • 1tbsp
    Amchur Powder
  • 1
    Bay Leaf (Tej Patta)
  • 1
    Black Cardamom
  • 6
    Black Pepper Seeds
  • 1tsp
    Fenugreek Powder (kasuri methi roasted and crushed)
  • 250g
    Onion (finely chopped)
  • 250g
    Tomatoes (coarsely ground)
  • 15clove
    Garlic (finely chopped)
  • 2tbsp
    Ginger paste
  • 2
    Green chillies

Method

  1. Take a heavy bottom pan. Place it on heat put oil, Asafoetida, cumin seeds, bay leaf, black pepper seeds, cardamon, cloves (laung), saute for 1 minute. Now add green chillies, ginger paste and garlic cloves to the pan and stir for a bit.

  2. After a minute, add onion and fry till slightly golden brown and soft. Then add tomatoes into the pan, add spices, coriander, red chilli, amchur, turmeric powder to the gravy mix and cook on medium flame. Keep stirring in between. Add fenugreek powder. Cover with the lid and cook on low flame for 5-7 minutes or till oil oozes out. Now add garam masala, and turn off the flame.

  3. After the mixture cools down completely, store it in your refrigerator.

Tips & Tricks

  1. Always keep in an airtight container on top shelf of the refrigerator, just scoop out the exact amount of gravy needed for the dish that is being prepared and put the mixture back in fridge.

  2. Do not leave the gravy mix outside for long period of time otherwise it will go bad.

  3. This gravy mix can be used to make any Curry like Rajma, Chole, Nutri Aloo etc.

  4. Can be used as a tadka for Daal. We can also make spicy Maggi or Macaroni by using a scoop of this gravy.

  5. Ideally this gravy mix is good for one week depending on the conditions it is preserved.
