How to make Instant Vegan Dhokla
First things first, pour water in a large pot. Then place a stand in it. Grease a pan for steaming the dhokla. Keep it aside.
Next, take a medium sized bowl and pour in the fermented rice batter. Add the semolina to the batter and mix. Add ginger, turmeric, green chillies and salt to the batter. Mix once again. Let it rest for a minimum of 10 mins. If after 10 mins, you find the batter too thick then add a tablespoon of water to the batter. You can add more water to the batter if you find the consistency too thick.
Once the batter is ready, after 10 mins add the pouch of Eno to it, give it a good stir and pour it in the prepared greased pan.
Steam the batter for ten minutes. The batter should have risen and will be porous.
Now for the tempering, put two teaspoons of oil in a small saucepan. Once heated add mustard seeds, they'll splutter then add sesame seeds, they'll splutter even more, add the slit green chillies and curry leaves. Lastly add a pinch of asofoetida powder and pour it over the steamed dhokla.
Enjoy it hot with green coriander and mint chutney.
