For the Crispy Cauliflower

    Cauliflower
  • 1pinch
    Salt
  • 1cup
    Refined Flour
  • 1cup
    Corn Flour
  • 1pinch
    Black Pepper Powder
  • 1tsp
    Kashmiri Red Chilli Powder
  • Water (as required)

For the Sauce

  • 2tbsp
    Oil
  • 1/2piece
    Chopped Onion
  • 1tbsp
    Chopped Ginger
  • 2tbsp
    Chopped Garlic
  • 2piece
    Chopped Green Chilli
  • 1/2piece
    Chopped Capsicum
  • 2tbsp
    Chopped Spring Onion Bulbs
  • 1/2tbsp
    Chopped Coriander Stem
  • 2tsp
    Soy Sauce
  • 1tbsp
    Ketchup
  • 1tbsp
    Red Chilli Sauce
  • Water (as required)
  • 2tbsp
    Corn Flour
  • 4tbsp
    Water
  • Handful Chopped Fresh Coriander
  • Handful Chopped Spring Onion Greens

How to make Crispy Cauliflower (Gobi) Manchurian Recipe

Preparing the Cauliflower

  1. Cut the cauliflower into bite-sized florets, then transfer them into a large bowl and rinse them well with water and a large pinch of salt.

  2. Let the florets rest in salt water for 3-4 minutes to help remove any dirt and impurities.

  3. Once rested for 4-5 mins, discard the salt water and rinse the florets with fresh water, then discard the water again.

  4. To make the batter for frying, add equal amounts of refined flour and corn flour in a bowl and season with salt, black pepper powder, and Kashmiri red chilli powder.

  5. Gradually add water while whisking continuously to make a semi-thin batter.

  6. Add the florets into the batter and mix well to coat them evenly.

  7. Fry the coated florets in moderately hot oil until light golden brown, then transfer them into a sieve and let them rest for a few minutes.

  8. Once rested, add the cauliflower back into the hot oil and fry until they turn golden brown and crispy.

Making the Sauce

  1. Set a wok or pan over high flame and let it get hot, then add oil, onion, ginger, garlic, and green chillies. Stir well and sauté over high flame for 1-2 minutes.

  2. Further add capsicum, spring onion bulbs, coriander stems, soy sauce, green chilli paste, ketchup, red chilli sauce, black pepper powder, and salt. Stir and then add water as required to make the sauce.

  3. Bring the sauce to a boil, then in a separate bowl, mix corn flour and water to make a slurry and add it to the sauce gradually while stirring continuously to thicken the sauce.

  4. Add the fried cauliflower along with fresh coriander and spring onion greens, and coat the cauliflower with the sauce without cooking much at this stage.

  5. Sprinkle some spring onion greens on top.
