For the Vanilla Sponge

  • 1 1/2cup
    all-purpose flour
  • 2tbsp
    milk powder
  • 1tsp
    baking soda
  • 1cup
    castor sugar
  • 1/2cup
    vegetable oil

    yogurt

    lemon juice
  • 2tsp
    vanilla extract
  • 1 1/4cup
    milk

For the Chocolate Coating

  • 1cup
    icing sugar
  • 1/4cup
    cocoa powder
  • 1tbsp
    butter

For Coating

  • 1 1/2cups
    desiccated coconut

How to make Classic Eggless Lamington Recipe

Prepare moist Vanilla Sponge

  1. Preheat the oven to 180°C (350°F).

  2. In a mixing bowl, combine the all-purpose flour, milk powder, and baking soda.

  3. In another bowl, whisk together the castor sugar, vegetable oil, yogurt, lemon juice, vanilla extract, and milk until smooth.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

  5. Pour the batter into a greased cake pan.

  6. Bake in the preheated oven for about 30 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool completely before removing it from the pan.

  8. Cut the sponge in the desired square shape.

Prepare the Chocolate Coating

  1. In a bowl, mix the icing sugar and cocoa powder.

  2. Melt the butter and add it to the dry mixture, stirring until smooth.

  3. Dip the square sponge piece in the the chocolate coating evenly.

Coat with Desiccated Coconut

  1. Sprinkle the desiccated coconut over the chocolate-coated piece of cake, pressing gently to adhere.

  2. Let the cake set for a few minutes before slicing and serving.
