How to make Cheesy Mushroom Pasta
Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.(Save 1/2 cup pasta water)
In a large skillet or frying pan, heat the olive oil and butter over medium heat. Add the onions and garlic ,cook until softened, about 3-4 minutes.
Add the sliced mushrooms to the pan. Cook, stirring occasionally, until the mushrooms are golden brown and have released their moisture, about 5-7 minutes.
Add the whole purpose flour and cook for 2 minutes.
Pour in the milk and simmer for 2-3 minutes, allowing the flavors to meld together.
Add nutmeg powder, oregano and chilli flakes.
Reduce the heat to low. Stir in the fresh cream and cheese until the cheese has melted and the sauce is smooth and creamy. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss until well coated in the creamy mushroom sauce. Cook for an additional 2-3 minutes, stirring occasionally, until the pasta is heated.
Serve hot, optionally with extra cheese on top.
