    small tomatoes, pureed
  • 1kg
    small brinjal
  • 1cup
    water
  • 1
    to taste salt

How to make Bengun Fry

Cooking Instructions

  1. Heat the vegetable oil in a pan and add the mustard seeds.

  2. Once the mustard seeds start to splutter, add the finely chopped onions and sauté until they are browned.

  3. Add the ginger garlic paste and pureed tomatoes to the pan, stirring well.

  4. Once the mixture is well combined, add the brinjal.

  5. Stir-fry the brinjal for about five minutes over medium flame.

  6. Add one cup of water and let it cook for 15 minutes.

  7. If you prefer more gravy, you can add additional water.
