How to make Authentic French Fried Chicken

Preparation

  1. Clean the chicken and cut it into bite-sized pieces. Wash in vinegar and water, then drain.

  2. Cut the garlic and scotch bonnet pepper. Add them along with Maggi seasoning to the chicken. Mix well.

  3. Leave to marinate for a few hours or overnight in the refrigerator. It can also be frozen for a few days.

Coating and Frying

  1. In a bowl, mix flour, a little Maggi seasoning, and baking powder. Set aside.

  2. Heat a frying pan and add oil. Add garlic and scotch bonnet pepper to season and flavor the oil.

  3. Add eggs to the chicken and mix well. Coat each chicken piece in the flour and then add back to the egg mixture.

  4. Once the oil is heated, remove the garlic and pepper pieces. Add chicken to the pan, not too much at once. Fry on low flame for 10-15 minutes on each side until brown.

  5. Place a hand towel in a bowl and remove the fried chicken, placing it in the bowl. Repeat the process with the remaining chicken.
