Fried Yam with Tomato and Pepper Sauce

- 3tbspsalt
- 3piecered bell peppers
- 1pieceyellow pepper
- 4piecefresh tomatoes
- 1pieceonion
- 1bundlescent leaf
- vegetable or groundnut oil
- 1pieceKnorr cube
- 1tspground ginger
- 1tspcurry powder
How to make Fried Yam with Tomato and Pepper Sauce
Peel and cut the yam into tiny pieces, put them into a bowl, and wash properly.
Drain the dirty water, then add fresh water to cover the yam.
Add 3 tablespoons of salt and mix everything together with your hands. Leave it for some time.
Chop the onions, peppers, tomatoes, and scent leaf.
Drain the water from the yam and put it into a sieve to continue draining.
Heat oil in a frying pan.
Fry the yams in batches, flipping side to side to allow each side to fry properly (each batch should fry for 2 to 3 minutes).
Once done, turn off the cooker.
Heat a little oil in a pot.
Add the onions and fry until they soften.
Add the fresh tomatoes and peppers, and fry until the water from the tomatoes dries up.
Add ground ginger, curry powder, and 1 Knorr cube seasoning. Stir properly and fry for 2 minutes.
Add the chopped scent leaf, stir, and turn off the cooker.
Serve the fried yams with the sauce. You can enjoy it with chilled soft drinks, hot tea, or pap, custard, or on its own.
Tips & Tricks
Ensure the oil is hot enough before frying the yam to achieve a crispy texture.
You can adjust the seasoning to your taste.
