Ingredients

Main Ingredients

  • 3lb
    beef chuck roast or short ribs
  • 1tbsp
    salt
  • 1tbsp
    black pepper
  • 1tbsp
    cumin
  • 1tbsp
    oregano
  • 1tsp
    smoked paprika
  • 1tbsp
    oil
  • 4piece
    dried guajillo chiles
  • 2piece
    dried ancho chiles
  • 2piece
    dried chipotle chiles
  • 4cup
    beef broth
  • 4clove
    garlic
  • 1/2piece
    onion, chopped
  • 2piece
    Roma tomatoes, chopped
  • 1tbsp
    apple cider vinegar
  • 1tsp
    cinnamon
  • 2piece
    bay leaves

How to make Easy Instant Pot Birria

Sear the Meat

  1. Set the Instant Pot to Sauté mode and add oil.

  2. Season the beef with salt, pepper, cumin, oregano, and paprika.

  3. Sear the beef for 2-3 minutes per side, then remove and set aside.

Prepare the Sauce

  1. In the same pot, add dried chiles, onion, garlic, and tomatoes.

  2. Pour in 2 cups of broth and bring to a simmer for 5 minutes.

  3. Blend the softened chiles, veggies, broth, vinegar, and cinnamon until smooth.

Pressure Cook

  1. Return beef to the Instant Pot and pour the sauce over it.

  2. Add the remaining 2 cups of broth and bay leaves.

  3. Close the lid, set the Manual/Pressure Cook mode to 45 minutes on High Pressure.

  4. Let it naturally release for 15 minutes before opening.

Shred & Serve

  1. Remove the beef and shred it with two forks.

  2. Strain the broth for a smooth consomé (optional).

Tips & Tricks

  1. For extra spice, include the optional dried chipotle chiles.

  2. Serve with warm tortillas and fresh lime wedges for added flavor.
