A flavorful and tender beef birria made easily in an Instant Pot, perfect for a hearty meal.

- 1tbspsalt
- 1tbspblack pepper
- 1tbspcumin
- 1tbsporegano
- 1tspsmoked paprika
- 1tbspoil
- 4piecedried guajillo chiles
- 2piecedried ancho chiles
- 2piecedried chipotle chiles
- 4cupbeef broth
- 4clovegarlic
- 1/2pieceonion, chopped
- 2pieceRoma tomatoes, chopped
- 1tbspapple cider vinegar
- 1tspcinnamon
- 2piecebay leaves
How to make Easy Instant Pot Birria
Sear the Meat
Set the Instant Pot to Sauté mode and add oil.
Season the beef with salt, pepper, cumin, oregano, and paprika.
Sear the beef for 2-3 minutes per side, then remove and set aside.
Prepare the Sauce
In the same pot, add dried chiles, onion, garlic, and tomatoes.
Pour in 2 cups of broth and bring to a simmer for 5 minutes.
Blend the softened chiles, veggies, broth, vinegar, and cinnamon until smooth.
Pressure Cook
Return beef to the Instant Pot and pour the sauce over it.
Add the remaining 2 cups of broth and bay leaves.
Close the lid, set the Manual/Pressure Cook mode to 45 minutes on High Pressure.
Let it naturally release for 15 minutes before opening.
Shred & Serve
Remove the beef and shred it with two forks.
Strain the broth for a smooth consomé (optional).
Tips & Tricks
For extra spice, include the optional dried chipotle chiles.
Serve with warm tortillas and fresh lime wedges for added flavor.
