How to make Easy English Muffins

Mix the Dough

  1. In a large bowl, mix the flour, sugar, salt, and yeast. Stir in the warm milk and melted butter. Mix until a sticky dough forms.

Knead

  1. Turn the dough onto a lightly floured surface. Knead for about 5 minutes until smooth and elastic. You can also do this in a mixer with a dough hook.

First Rise

  1. Place the dough back in the bowl, cover, and let it rise in a warm spot until doubled in size, about 1 hour.

Shape

  1. Punch down the dough. Roll it out to about 1/2 inch thick. Cut out circles using a glass or a biscuit cutter, about 3 inches wide. Sprinkle a baking sheet with cornmeal and place the muffins on it. Dust the tops with more cornmeal.

Second Rise

  1. Cover and let the muffins rise for about 20 to 30 minutes.

Cook

  1. Heat a nonstick skillet or griddle over low heat. Carefully transfer the muffins onto the skillet. Cook for 7 to 8 minutes on each side until golden brown and cooked through. They will puff up!

  2. If they brown too fast, lower the heat.

Cool and Enjoy

  1. Let them cool slightly, then split with a fork and toast if you like!
