  • Grounded melon seeds
  • Stock water from boiled meats
  • Seasonings
  • Bitter leaf
  • Dry fish and stock fish
  • Pomo and Chicken
  • Ugwu leaf
  • Grounded pepper and tomatoes
  • Grounded onions
  • Palm oil
  • Grounded Cray fish

How to make Egusi and Vegetable Soup

  1. Boil your chicken and add seasoning to toast. Cover and allow to boil until tender(not too soft). Take out off fire and put oil in a pan to fry your chicken. Sieve the stock water from the chicken and fry your chicken in hot oil.

  2. Place a clean pot on fire and add your grinded pepper. Add salt to taste and pour two cups of water to cook the melon. After 5 minutes of boiling, add your chicken, fish, stock fish, pomo into the mixture.

    Mix your melon and grounded onions in a separate bowl with little water and mix together. It must be very thick. dice the mixed melon together and add grounded crayfish and seasoning to it.

    let it cook for few minutes.

  3. Taste your melon combo if the seasoning is enough. Add your sliced vegetables and washed bitter leaf (small quantity) to the melon and cover to simmer. After 3 minutes, stir all together and let it cook for about 4-5 minutes. Check the leaves in interval if it is soft and edible. Add, your palm oil to the soup, cover the pot and let it cook together.

    Taste and it is ready to be served with any swallow of your choice.
