How to make Plantain and Beef Rice Bowl

Preparation

  1. Rinse the rice and beans thoroughly.

  2. Chop the onions, tomatoes, and bell peppers.

  3. Slice the plantains into desired shapes.

Cooking

  1. In a pot, heat the vegetable oil and sautΓ© the onions until translucent.

  2. Add the chopped tomatoes, bell peppers, and tatashe/sombo/scotch bonnet pepper. Cook until soft.

  3. Stir in the beef and cook until browned.

  4. Add the seasoning cubes, curry, thyme, and salt. Mix well.

  5. Add the rinsed rice and beans to the pot. Pour in enough water to cover the mixture.

  6. Cover and cook until the rice is tender and the water is absorbed.

  7. In a separate pan, fry the sliced plantains until golden brown.

  8. Serve the rice and beans mixture topped with fried plantains.
