How to make Aloo Gobhi
- Step 1
Wash and blanch the cauliflower florets.
- Step 2
Heat oil in a pan and temper mustard seeds with asafoetida and curry leaves on low flame.
- Step 3
Once the mustard seeds flutter, add sliced onion and finely chopped green chilli. Fry for a minute on low flame.
- Step 4
Add chopped tomato and fry until it softens, which will take about a minute on low flame.
- Step 5
Add kashmiri red chilli powder, coriander powder, turmeric powder, cumin powder, and salt to taste. Mix well and simmer until the oil separates.
- Step 6
Once the oil separates and the tomato moistens completely, add diced boiled potato and blanched cauliflower florets. Coat the masalas well.
- Step 7
Add pav bhaji masala and chopped coriander leaves. Mix well, cover, and cook for 2-3 minutes on low flame.
- Step 8
Let the dish rest for a few minutes and serve hot with dal rice or chapati.
